Sunday dinner of Thankgiving dinner leftovers

I love Thanksgiving!  But creative use of leftovers is always a challenge.  I think, the reason is because I have a stack of tried-and-true family favorites and there are never enough leftovers for trying out new recipes.  This year was a little different.

By the Sunday after Thanksgiving, I’m ready to clean out all the bits-and-pieces of leftover this and that, which most often are from the vegetable side of our plates.  It was a pot of “Stone Soup”  (named for the children’s story by that name) with some Sweet Potato Rolls (used my old reliable Betty Crockett Potato Refrigerator Rolls recipe but used leftover mashed sweet potatoes warmed in microwave in recipe.  The last of the leftover turkey was chopped up for a simple turkey salad-style spread to satisfy Fred’s need for meat.  But I must say, the rolls and butter were so good, we also had them for dessert.  And the leftover butter went on hot biscuits the next morning..
