Salt Springs Pear Butter

Across the road from the Ocala NF’s  Salt Springs campground (located in central Florida) was a produce stand.  Boy, do we love produce stands!  We haven’t found a grocery store anywhere that can touch the delicious produce you can buy at a roadside produce stand and the Salt Springs’ stand was no exception. We got   Read More >>

Fried Biscuits and Donut Holes – two breakfast favorites

Cooking from scratch wasn’t my mom’s thing.  However, what she could do with a tube of refrigerated biscuits was amazing.  Fried biscuits and donut holes are two of my personal favorites. Fried Biscuits Open a tube of refrigerated biscuit and separate each biscuit.  Flour a flat surface and your rolling pin.  Put a biscuit on   Read More >>

Peanut Butter Cheerios Cookies

Here’s a simple recipe for a yummy and healthy NO BAKE cookies.  Only thing missing is a glass of milk.  I’ve been known to drizzle with melted chocolate over them or serve with a cup of hot chocolate.  Perfect as a summer camping snack, they are also a good activity for days when the children   Read More >>

Soft Butter

I must bake some bread for an upcoming camping trip but I’ve got my soft butter all done.  (One of the advantages of having a motorhome – a refrigerator!)  Fred reminds me they sale a similar product in the grocery store but I don’t think it compares. Jane’s Oyster Crackers

Fred’s mother, Jane, had a shoebox full of good recipes but her Oyster Crackers recipe is one of my most favorite.  Warning: they are habit forming.  I’ve been known to “dress-up” these little nuggets of yum by adding raisins and/or mini-chocolate chips which makes the perfect for any hike and day shopping.  Here I used   Read More >>

Camper’s style vanilla pudding

A batch of instant pudding, any flavor, has always been a family favorite around our campsite.  It has always been made by the children. You see, I have long felt, the cook is on vacation, too, so others need to pitch-in.  This pudding is easy enough Dad, as well as toddlers, can make.  And the   Read More >>

Halloween goodies for Grand-babies

I’m basically a scaredy-cat.  I once would cover my eyes for scarey scenes in movies but now I avoid scarey stuff altogether.  So you would think Halloween wouldn’t be a favorite holiday but I since I have grand-babies, I really enjoy it. Although I can’t be there when my grand-babies get dressed up for their   Read More >>

Original Chex Party Mix – always a hit

Been making Chex Party Mix since the 60’s.  Back then it was made in the oven (microwaves hadn’t been invented yet!).  It is faster in a microwave, and the finished product is okay, but occasionally I’ll go back to my in-the-oven version.  Also, I’ve been know to toss in some dried fruit or chocolate chips.   Read More >>
