Peppermint Cocoa Mix
There are some things that are essential to all my camping adventures and hot chocolate tops that list. I feared, once diagnosed with a lactose intolerance, I would have to give up this camping essential. But for joy, for joy, there is something about cocoa that allows my body digest milk. Means hot chocolate remains a favorite campfire beverage.
This is one of my favorite recipes for my evening treat. I could replace the milk with powdered milk and then only need to add water but I don’t think it’s the same. No, I’ve kept recipe just as I found it at Frugal Family Fun Blog.
Peppermint Cocoa Mix
In a one quart jar, put:
1 1/2 cups powdered sugar
1 cup plus 2 Tbsp. cocoa powder
6 candy canes, broken into pieces and ground to a fine powder
Now, secure lid and shake to mix thoroughly.
Heat one cup of milk to steaming (be careful not to boil or you’ll have that yucky skin) and add two heaping tablespoons of Peppermint Cocoa mix. Stir well and serve with a whole peppermint candy cane for stirring or a big marshmallow and a couple of graham crackers. Ah, life is good.
Try dipping fresh fruit into the Peppermint Cocoa mix for a quick treat.
