Hot Soup for a Cold Day
Is there anything better than a bowl of hot homemade soup on a cold day? No matter were you are, at home or camping in national forest, cold weather calls for a bowl of hot homemade soup, thick with veggies, just as a day building snowmen calls for a mug of hot cocoa.
I love this recipe from my 7th grade Home Economic’s class. Truly a “go to” recipe since you can use whatever leftovers and vegetables are in the house. My soup tends to reflect the season. This time of year its a medley celery, potato, carrot, and onion with leftover cooked chicken or turkey. My advice is to just go for it and enjoy.
Cream of Whatever Soup
serves 4
2 C. diced or sliced vegetable(s)
½ onion, chopped
3 T. each butter/margarine and flour
3 C. milk and/or bouillon
salt, pepper, and chopped parsley
Dash of freshly ground nutmeg – optional
Cook vegetable and onion in 1 C of water until tender. Melt butter and blend in flour, then add milk and cook, stirring till thickened. Add cooked vegetable and a handful of leftover meat if desired in liquid. Heat gently, and season to taste.
Options:
- When using asparagus add a bay leaf and ½ tsp thyme.
- If making over a campfire, rub butter and flour together and drop into the hot milk and/or bouillon and stir occasionally until soup thickens slightly.
- Don’t be afraid of using leftover veggies just cut into bite size pieces.
- No butter/margarine? Drop butter/margarine and flour and use 3 to 6 tablespoon instant mashed potatoes.
