Where Can One Camp Over Night Along The Trail?

Hello All!
The wife and I are here in Florida we are looking for a place we can trail ride but at the same time camp along the trail.

We do trail ride and have camped but always in designated areas at our truck with amenities. Which is great but once in a while something a little more throw back would be a nice change.

We are looking for a more rustic throw back type trail ride. We would like to bring our pack mule, camping gear, food, our horses, take to a trail and when the feeling strikes pull off the trail pitch our tent and camp for the night. Maybe repeat that over the course of a weekend or maybe a week breaking camp riding for a time and then finding another spot and setting up camp again. Good'Ol fashioned trail ride/camping.

Is that just crazy or are there parks that allow that type of trail ride unguided?

Anyone know of anything like I have explained?

You might want to check out http://www.horsetraildirectory.com/. Also, consider clicking on the "National Forests & Campgrounds" tab (upper left). Go through the campground descriptions where you might find some leads.
