Truck Stop dressing – Creamy Honey Mustard
Not all trucks stops are created equal. Found one along I-40 with a bank of condiments next to where the hot dogs, burritos, and such were kept warm. I grab some little packets of mayo, honey, Dijon mustard (who has Dijon mustard!!!) and lemon juice and using the portion from my Cream Honey Mustard dressing made a bunch. Here is that basic recipe:
In a container, mix until well blended:
5 Tbsp honey
3 Tbsp Dijon mustard
2 Tbsp lemon juice
10 Tbsp mayonnaise
Serve immediately over lettuce or let set for a while. Remember, it is the ratio that is importation. I used packets in place of tablespoon.
